as promised, i made these for my fiancé last night as a little veterans’ day ‘thank you!’ i recommend a mixed berry filling, rather than just raspberries, & the orange juice gave it the perfect tangy kick. the meringue was crispy on the outside, marshmallow-like on the inside, & i decided to pipe it on (instead of just spooning it on ala the recipe), which i think made it so pretty. (recipe)

 I love this. The piping definitely made a difference.

organic milk is nasty.

If it’s Horizon Organic Milk you’re talking about it’s important to know that brand is ultra pasteurized, which means it’s heated at a higher temp than regular milk to make it last longer and travel further. So it can taste funky for a variety of reasons: if it sat on a shelf for too long, or got too warm at some point. But even without those things occurring it does taste different than regular pasteurized milk. Personally I find it weird, the whole process of why it’s ultra pasteurized, the fact that it can sit on a shelf and not be cold, not to mention I simply don’t like the taste. I’d much rather support local dairy farms than drink less than appetizing Horizon milk that traveled for days to get to my refrigerator.

Let the Games Begin!
You should all be excited right now. Why? Because from now until December 31st, your friendly neighborhood Nutritionista is hosting her first ever challenge.
The name of the game: Winter Shape Up Challenge
The goal: Be our healthiest during this fall-to-winter transition, when many people start to fall off the wagon (coughholidayscough).
The goods: $50 gift card to the store of your choosing (provided they sell gift cards online).
The way to win: Starting today, email me every Monday with your weight loss, fitness, or nutrition goals and progress. 
Today, your email should contain your overall goal and then a specific weekly goal. Your goal can be weight loss, fitness, or nutrition-related. The point is to set a mini goal every week that you follow up on the next week. But it’s YOUR challenge. You can set whatever types of goals you want! For example, a fitness-related goal could be doing strength training three times during the week. A nutrition goal could be eating at least three different kinds of veggies per week. A weight loss goal could be losing two pounds that week. You can have only one type of goal (fitness only, for example), two kinds, or all three. It’s up to you, but I will say that it’s hard to ONLY have a weight loss goal without a fitness or nutrition goal to accompany it. The next week, your goal could change, or be exactly the same. Next Monday (10/26), you’ll email me with your progress from the last week (did you or didn’t you complete your goal?) and then a new mini goal for the next week. You have to do this for all 10 weeks of the challenge to be qualified to be randomly selected for the grand prize! The last day for emails is 12/28, and the winner will be announced on 12/31.
For those of you that already emailed me but didn’t include the necessary info, just get it to me before the end of the day. I’m so excited to already have many participants! I’ll be keeping track of your progress on my own spreadsheet and often here on the blog (though let me know if you don’t want me to post about you — I will never post anyone’s full name or weight).
This challenge is all about accountability. If you constantly have to report your progress to another person, you’re definitely going to be more likely to fulfill your goals. And remember, if you don’t email me every Monday (you have until 11:59 every Monday) with your new goal and progress from the last week (regardless of how well you did), you can’t win the prize. If you emailed me last week, you still have to email me again today (by 11:59pm tonight).
Now that we’ve taken care of the details, my goals for the week:

Eat a vegetable at two out of three meals, and at least one snack.
Strength train four times.
Lose two pounds. I just did my first official weigh-in, so I’m ready to go!
